Our Story
The next chapter of Japanese dining.
One Bryant Park is where Japanese culinary tradition finds its next form — not by leaving the past behind, but by carrying it forward.
At its heart is Culinary Director Tadaaki Ishizaki, whose craft is shaped by the precision of a deep reverence for kaiseki — a cuisine rooted in seasonality, ritual, and the passage of time. At One Bryant Park, the menu turns eight times a year, guided by the twenty-four solar terms that have long defined how Japanese chefs understand the seasons. Each transition brings new ingredients, new expressions, and a renewed sense of the present moment.
This is New Japanese dining — where tradition and innovation coexist, and Japanese food culture continues to evolve.
